I love dessert. There’s definitely a science behind why chocolate and other sweet foods are actually really good for you- I think it’s something about it boosting your serotonin levels? That’s good enough for me! Food makes you happy and the proof is in the pudding…
It’s the best thing to finish off a meal or to have as a special treat. And now it’s winter, there are plenty of opportunities for festive gatherings, which aren’t complete without a yummy treat.
Finding nice vegan desserts can be a struggle and they usually end up being quite expensive, so what better way to combat this than doing it yourself? Treat yourself and your friends with these amazing conscious vegan desserts.
A lot of these are bitesize puddings and are therefore transportable too – they would be great to take into work or to university to give away or for a lunchtime pick up!
#1: No Bake Snickers Cheesecake from A Saucy Kitchen
If you tell me something has peanut butter it in I am all over it, so this is, of course, a definite winner if you are a massive peanut lover like I am. This cheesecake has a date and walnut crust, a cashew and coconut cream filling and is topped with a nut butter caramel – which is an absolutely mouthwatering combination. For extra indulgence, she recommends adding salted peanuts and dark chocolate.
#2: Pistachio Chocolate Banana Sushi from the Petite Cook
For those times when you’re trying to be good but you are desperately in need of something sweet- this is ideal. There’s nothing more delicious than the combination of chocolate and banana, and pistachio adds an extra layer of yum. It is also incredibly quick and easy to make and uses only 3 ingredients; you can make this nutrient-packed and 100% vegan dessert in absolutely no time at all. A sweet treat that’s good for you? Perfect.
#3: Vegan Rocky Road from Made By Luci
Perfect for any chocolate lover, this classic tray bake is simple to put together and always a triumph. This is also really simple to make vegan and can be altered to how you desire your rocky road, we love the addition of the vegan white chocolate on the top! Why not try a variety of vegan biscuits and see which one works best?
#4: Chocolate Peanut Butter Mousse from A Couple Cooks
This is one of my favourites and it completely blew my mind that you could use tofu to make a dessert! But this seemingly unusual option really works as it creates a delicious, creamy texture and it’s great to get protein in your pud. Also, this has only 4 ingredients and just needs to be whizzed up in a blender. I can’t really sell it any more than that!
#5: Vegan Apple Crumble from The Petite Cook
This one is perfect for the winter months when you’re in need of something to warm the stomach and the soul. The Petite Cook uses a delicious combination of apples and cranberries that are perfectly complemented by a nutty topping, but again this one can be altered by adding different fruits such as apple and rhubarb or apple and blackberries. See what’s in season at your local farmers market, or even better – why not go blackberry picking? This is delicious served hot or cold!
